I am happy to announce that I have found a wonderful “Tea Lady” to take over SBS Teas. Her name is Karen and we have been very busy working out all the details for a smooth transition by the end of March. She lives in California so we will have to ship all of the products to her. So, be patient with us as we relocate SBS Teas to the West Coast!!
I am excited to be able to retire and travel with my husband but I am going to remain part of the business as a consultant, adviser and contributor.

Website Update
My husband and I have decided to retire from the tea business and tackle our bucket list before we run out of time and energy. We both have had significant health issues–a brain tumor for me and he is in a study at Duke for memory loss.
The past five years have been exciting and challenging. We have worked very hard to make SBS Teas a business we could be proud of. None of this would a have been possible without YOU–our wonderful customers!!!!
If you have ever thought about owning your own tea business I would love to talk with you. We will be closing the doors the end of February.

Japanese Green Tea Petits Fours
Ingredients:
2 eggs
3 egg yolks
6 tablespoons white sugar
1/3 cup cake flour
2 tablespoons cornstarch
1 tablespoon powdered green tea
2 egg whites
1/8 teaspoon cream of tartar
2 tablespoons white sugar
1 cup heavy cream
2 teaspoons powdered green tea
4 teaspoons superfine sugar
6 tablespoons almond paste
1 teaspoon powdered green tea
confectioners’ sugar for dusting
Directions:
1. Preheat oven to 450 degrees F (230 degrees C). Grease an 11×7 inch pan. Line bottom with parchment paper and grease and flour paper. Sift together the flour, cornstarch and 1 tablespoon green tea. Set aside.
2. In a large bowl, beat eggs, yolks and 6 tablespoons sugar until tripled in volume, about 5 minutes. Fold flour mixture into whipped eggs. In a large glass or metal mixing bowl, beat egg whites with cream of tartar until foamy. Add 2 tablespoons sugar, continuing to beat until stiff peaks form. Fold 1/3 of the whites into the batter, then quickly fold in remaining whites until no streaks remain. Spread batter into prepared pan.
3. Bake in the preheated oven for 8 to 10 minutes, or until center of cake springs back when lightly tapped. Sprinkle with confectioners’ sugar, then invert onto a flat surface. Let cool.
4. To make the Green Tea Whipped Cream: In a medium bowl, whisk the heavy cream with the 4 teaspoons superfine sugar and 2 teaspoons green tea until stiff peaks form.
5. To make the Decorative Green Tea Marzipan: Knead the almond paste with 1 teaspoon green tea. Roll out between 2 sheets of plastic wrap, or lightly dust with confectioners’ sugar while rolling.
6. When cool, remove parchment paper from bottom of cake. Cut cake horizontally down the middle to make two layers. Spread bottom layer with 1/2 of the whipped cream, then cover with top layer of cake and spread top with remaining whipped cream. Cut assembled cake into 12 pieces using a knife or decorative cutters. Roll out the marzipan and cut into 12 pieces to match the shapes of the cakes. Place the decorative marzipan pieces on top of cakes.

Drinking tea has been proven by research many times over to provide many healthy benefits. Because it has been shown white and green tea contain antioxidants which can help fight cancer and slow down the natural aging process, they are deemed very good for your health.
There are many other health benefits that can be obtained from drinking tea daily. Common benefits are to help with certain tumor and cancer prevention, lowered cholesterol, and a healthier heart. But did you know that the properties in tea can also help keep your skin look younger by destroying the free radicals which cause dark spots and wrinkles. Tea has also been shown to even fight cavities. Polyphones found in some teas help to strengthen teeth by naturally reducing damage inflicted upon them by plaque.

What’s in Your Cup Wednesday…..
This morning I awoke to a dark, rainy day. I think the best course of action is to brew a pot of English Breakfast tea and add lots of cream and sugar to help brighten my mood. I am sure this will help me chase away the chill in the air!
Just for fun…do you put your cream in your teacup first or do you pour your tea and then add the cream? I pour my tea first and then add cream and sugar. There are lots of theories as to the best method so I am curious to hear what you think! I say anything goes in the personal world of tea!!
